Buttery Pan-Fried Cheese Toast

This cheese sandwich recipe is really approachable and might I say - fun! - to prepare. I remember watching this sandwich being prepared as a kid. To my eyes, it was absolutely magical how a piece of bread topped with cheese, onions and tomatoes turned into this yummy treat within a few seconds! For this toast, the cheese is molten, the veggies are ever so lightly cooked and the bottom of the bread is warm and toasted. The best part of preparing the sandwich on a non-stick pan is that the clean-up is easy - perfect to save you some time in the morning!
After all, who wants to wait for the oven to heat up for a quick snack that is consumed in a few seconds (or is that just me?).
The secret is in the flip!
1. It all starts with your favourite bread, which would be rye bread in my case. Then you top it up with grated or sliced cheese - cheddar or any other moist cheese works best since it helps the toppings stick to the toast during cooking. Mozzarella can work as well but make sure the toppings stay in place during the flip.
2. Sprinkle the tomatoes, onions and chilies and gently press on the topping to help attach it to the cheese.
3. On a non-stick pan, melt a bit of butter. Hold the sandwich, topping side up in the palm of your hand, ensure the toppings are secure and in a quick motion, flip the bread, cheese side down on the pan.
While lightly applying pressure, twist and move the bread around the pan for about 10-15 seconds
4. Flip bread to toast the underside of the bread. This step can be done with your bare hands if you are comfortable or using a spatula.
Repeat with the remaining slices of bread, serve hot, and enjoy all the cheesy goodness!
Can I prepare this in the oven?
Of course you can! To prepare this cheesy toast in the oven, butter one side of the bread and place it on a baking sheet, lined with aluminum foil. Pop it in the oven and toast for 3-4 minutes or until the butter is molten and the bread is lightly toasted.
Next, top with cheese and toppings, and place back in the oven until the cheese is molten.
