Spicy Masala Cheese Toast

Vegetables have never been my friend. Growing up, I was a rice and potato kind of guy. If I you gave me some McDonald’s French fries or a classic Aloo Bhujia, then I was more than ecstatic! The struggle for my parents to feed me a balanced diet was real!
One of my real enemies was tomatoes. Unless they were pureed into a sauce, I wouldn’t even want to look at it. Then one day, my grandmother introduced me to this magical sandwich. It has such simple ingredients but together it is something else.

Essentially tomatoes are great to provide you with:
Antioxidants such as lycopene, which has been linked to many benefits.
Lycopene is also linked to reducing risk of heart disease and cancer.
They are also a great source of vitamin C, folate and vitamin K (source)
What’s The Secret of the Masala?
So here it is, olive oil, onions, tomatoes, chilies, cheese and your favourite bread. Really, that is all! There was this one time when I finished half a loaf of bread just for myself! Things did change a bit when I moved to Canada, the cheese here is not the same. Not to say that its any worse, since ever since I came here, I have been exposed to more varieties of cheese and flavours than I can list on this post.
What about the Cheese?
Growing up, the best, cheapest cheese, which probably was the most common cheese in all households was Amul Cheese. So yes, it is processed cheese but it tastes so good, and I think it’s the saltiness that helps with the flavour.
My favourite cheeses to use with this recipe includes mozzarella, Monterey jack, cheddar and even havarti! Mozzarella, in my opinion is the clear winner if you’re looking for cheese pulls. You can feel free to add a mix of these cheeses, but I have not done so myself.
How to Make Masala Cheese Toast
This masala cheese toast can be made in a couple of easy steps! Begin by heating a pan on medium heat. Add butter or oil to the pan. When the pan is hot, add the onions and sauté until they are lightly browned.
Next add the tomatoes, green chilies and chili powder. Cook until the tomatoes become soft, stirring occasionally. This will take about 5-10 minutes. In the meanwhile, toast your slices of bread.
When your tomatoes are soft but not mushy, turn off the heat and add your cheese. Stir until the cheese melts. Using a spatula, apple the cheese masala to each slice of bread and serve hot!
