French fries are such a major part of my life! Who can turn down having a side of fries with your favourite food? Check out my stories on Instagram and you’ll see for yourself! For a convenient and healthier option, air frying fries is excellent to satisfy the craving, but when it’s a special occasion and I’ve got the oil, deep frying fries is loads of fun and really yields some super high quality French fries!
Recently I took a trip to Montreal and I had my very first garlic Parmesan fries to complement my truffle pasta. I saw garlic Parmesan fries on the menu and couldn’t resist ordering them. I’ve heard a lot about garlic Parmesan fries before but believe it or not I’ve never actually tasted them! Well, my life certainly changed! Only a couple of days later after returning home, I went to another restaurant and ordered a brisket burger, and of course I just had to get the garlic Parmesan fries to accompany that! At both places, the garlic Parmesan fries blew me away, and I was so eager to make them at home!

What Potatoes are Used to Fries with Garlic Butter?
Every single time I make French fries I use Yukon gold yellow potatoes, and that won’t change. To be totally honest I don’t understand why people use russet potatoes. French fries are iconic because of their yellow colour, and when you cook russet potatoes, the fries are white! Hint: That’s why McDonald’s has “golden arches!” The name is in “Yukon gold” potatoes, so I strongly recommend these! You’ll get the perfect colour, crispiness, and taste! Russet potatoes have a bland after-taste that I don’t particularly enjoy. Yellow potatoes all the way!
How to Cut Potatoes for Garlic Parmesan Fries
Rinse and wash the potatoes well. You may peel the potato or keep the skin on.
Slice each potato into 1/4 inch thick slices.
Then, stack 2-3 slices at a time and cut the potatoes into 1/4 inch matchsticks.
WHY SOAK THE POTATOES?
You need to soak the potatoes to remove the starch from them. I recommend you don’t skip this step because the gumminess of the starch will stick on to your potatoes, and your fries are more likely to be soggy.
Why Boil the Potatoes?
I boil my potatoes to speed up the cooking process! If you don’t do this it’ll take forever for your potatoes to cook in the air fryer! Boiling the potatoes prior to air frying helps cook them on the inside, so that when you’re air frying, you can just focus on getting the outside a golden crisp! Otherwise, it’s challenging to achieve the right colour and crispiness outside but also warm and fully cooked inside. If you don’t boil your potatoes prior to air frying, you’re more likely to over cook the outside for the inside to be fully cooked. This guarantees your potatoes are fully cooked inside and you have just the right golden iconic French fry colour!

What Air Fryer Do you Recommend For French Fries?
I’m using the Ninja Foodi 6-in-1 2-Basket Air Fryer. This is really convenient if you’re making an entire meal in the air fryer because you can set the two baskets at different cook methods, temperatures, and cook times. This is great if you’re planning on making an For example, you can make some Air Fryer Buffalo Chicken Wings to go with your fries, and nothing will get cold! The “smart finish” setting means that when the basket that requires a longer cook time (typically the protein) is close to being finished, the second basket will automatically start. It also has six different settings, which include:
Air Fry
Air Broil
Reheat
Dehydrate
Bake
Roast
My most common setting is of course Air Fry, and occasionally I use Air Broil. For a more detailed review of this air fryer, check out my first impressions video!

How to make Air Fryer Garlic Parmesan Fries
For the Air Fryer Fries
Add the peeled, cut fries in a large bowl and fill with cold water and soak for about 25 minutes (see tip for a shortcut). In the meanwhile, set a large pot of water to boil.
Add soaked fries to the boiling water and boil for 3-5 minutes, or until the potatoes are partly cooked but still firm. Add only enough potatoes that will comfortably fit in your air fryer basket in a single layer.
Drain the potatoes onto paper towel and gently pat dry. Then, transfer the fries to a large bowl and coat with olive oil. Gently toss the potatoes in the oil and arrange fries in a single layer in the air fryer basket.
Set Air Fryer to Air Fry mode at 400F and cook for 15 minutes.
If making a multiple batch, transfer the fries from the air fryer basket to a bowl/baking sheet and repeat steps 2-4 for the remaining portion of fries.
Once all the fries are crispy, you can toss all the fries in a single basket to refresh the fries at 375F-390F for 3-5 minutes.
For the Garlic Butter
Combine all the ingredients in a bowl. Using a whisk or a spatula, combine well together. Reserve as needed for the recipe and freeze the rest.
To store the garlic butter, place in the middle of a plastic wrap.
Roll the plastic around the butter to form a cylinder and twist the ends to create tension around the butter until you have a tightly sealed portion of butter. Freeze and serve later as needed.
To Serve
Add the fries to a bowl, add 1-2 Tbsp of the garlic butter, 1 Cup of finely grated parmesan and toss well. Serve warm!
Tips for Amazing AIR FRYER Garlic Parmesan FRIES
Be consistent with the thickness of the fries as you cut them. The more even the shape and size of the fries, the better consistency you will see with the doneness.
Soak the fries in cold water to rinse off excess starch to help get the fries crispy.
In case you are short on time and patience soak the potatoes in cold water only until the water comes to a boil.
Boil the potatoes in batches large enough to comfortably fit in your air fryer basket in a single layer.
If making multiple batches of fries, once the last batch is ready, you can toss all the fries in a single basket to refresh the fries at 375F-390F for 3-5 minutes.
HOW TO REHEAT AIR FRYER Garlic Parmesan FRIES
I wouldn’t top my fries with the garlic butter and Parmesan cheese in advance, but you can make fries in advance if necessary. Store the French fries in an airtight container in the refrigerator. Reheating the fries is simple: add them in the basket and Air Fry at 350 F for 5-10 minutes or until heated through! Of course, to save time, you can also make your garlic butter in advance.
I don’t have an Air Fryer! Can I bake Garlic Parmesan Fries?
Definitely! Pre-heat your oven to 475 F, and follow the steps to soak and boil your potatoes. When it’s time to bake, transfer fries to a large enough bowl and season with salt and olive oil. Layer a large baking tray with parchment paper and place the fries on it. Bake the fries on the middle rack for 20 minutes or until they are light golden brown. Once lightly browned, move the rack and tray to the lowest oven rack bake until crispy, about 15-20 minutes flipping once to ensure each side is crisp. When the fries are finished, then all top with the butter and Parmesan cheese as described in this recipe!
