Of course, even if you’ve got a better half, then you could prepare this for you two to enjoy - or perhaps you can be greedy and enjoy this yourself! You can quite honestly enjoy this Baked Deli Chicken Sandwich recipe any time you want because it’s absolutely delicious with sweetness, spiciness, and smokiness, and it comes together so fast! Plus, it features incredible homemade sauces that are fresh and vibrant!
In this Baked Deli Chicken Sandwich recipe we have loads of fresh veggies and a strong smoked gouda cheese! I’m using some some oven roasted deli chicken here to make this deli chicken sandwich a convenient lunch option. I love getting lots of meat at the deli counter because there are so many options to choose from! I have to admit, when I get some deli meat, I do plow through it! Not only in lunches, but it makes for some great snacks in between meals!
This Baked Deli Chicken Sandwich recipe was my attempt to create the ultimate sandwich shop experience at home. I like to enjoy a good sandwich from local bakeries that have some really incredible combinations, but I also love to purchase some fresh baguettes at the grocery store! What better way to enjoy a soft and warm baguette than in a sub with your favourite goodies? Fresh, healthy, tasty and easy to make!
Tools Needed to Make This Baked Deli Chicken Sandwich Recipe
Ingredients for Cheesy Baked Deli Chicken Sandwich
You just need a couple of simple and fresh ingredients for this Baked Deli Chicken Sandwich recipe:
Oven Roasted Deli chicken: If you want to be adventurous, you can use any deli meat of your choice.
Baguette or ciabatta: The bread I used was a sourdough/baguette fusion.
Cheese: I used smoked gouda cheese to add a touch of heat. I really love the jalapeños in here!
Bacon: You can prepare your bacon however you would like and use the flavour of bacon of your choice. I baked my bacon strips in the oven, and maple flavoured bacon is my favourite!
Lettuce
Tomato
Onions
Pickles: I used baby dill pickles here.
Spicy Mayonnaise: Made with mayonnaise, sriracha sauce, lemon juice, garlic cloves, salt and pepper. You can check out the full recipe for more details and how to store your extra spicy mayo, plus other serving suggestions!
Honey mustard: Simply made with honey and mustard. I’m using this organic Dijon mustard that I’ve grown to love! It is much lighter and tastier than regular Dijon, and it costs about the same too, so I highly recommend you pick this up! I can’t go back to the regular stuff now!
Salt and pepper: Essential seasonings to bring out all the amazing flavours in our sandwich!

In this Baked Deli Chicken Sandwich recipe, I used oven roasted chicken for my deli meat of choice. As I mention in my free motivational guide to explore your potential in the kitchen, Make Cooking Fun!!, if you have a suitable substitute already, then there’s no need to go out to purchase EXACTLY what I’m using! With that being said, you can most certainly free to use any cut of meat you like! You could even mix and match your favourite deli meats! I tend to alternate between using turkey and chicken for my deli meats. How to Make This Cheesy Baked Deli Chicken Sandwich Recipe
This cheesy baked deli chicken sandwich can be made in just a few easy steps! This is perfect for lunch time! The only cooking that’s done with this sandwich is letting the cheese become molten in the oven! Be sure to scroll down to the bottom of this post so that you have the FULL PRINTABLE RECIPE for all ingredient measurements, and to save the recipe for later!
Preheat your oven to 400°F (200°C). Slice the baguette or ciabatta lengthwise and place on a baking sheet. Bake for 5 minutes, just until lightly toasted inside.
Prepare the sauces
In a bowl, mix mayonnaise, sriracha, lemon juice, minced garlic, salt, and pepper until smooth for the spicy mayo.
For the honey mustard, mix together dijon mustard and honey until well combined.
For the Baked Deli Chicken Sandwich
Spread 2-3 tbsp of spicy mayo on each half of the toasted bread. Layer the deli chicken on the bottom slice, followed by the gouda slices.
Place the bottom slice back in the oven for 2-5 minutes, or until the gouda is bubbling and melted.
While the cheese melts, arrange the pickles on the top half of the bread. Once the cheese is melted, remove the bottom half from the oven. Top the chicken with crispy bacon, red onion slices, tomato, and a sprinkle of salt and pepper. Drizzle honey mustard over the veggies.

Add the shredded lettuce on top, then close the sandwich.

Tips for baked deli chicken sandwich
Plan ahead and prepare the spicy mayo and honey mustard ahead of time! Make sure to store on an airtight container in the fridge for up to a week to always be sandwich ready.
Add a spin to the toppings by adding fresh avocado slices, jalapeños or replacing onions pickled onions for a refreshing tang.
Use the fresh bread from your local bakery if possible to get the ultimate sandwich experience, there’s nothing like toasting a freshly baked loaf of bread from the day.
Swap out the deli roasted chicken with roasted turkey, garlic deli chicken, Mediterranean style deli chicken or even roast beef.
For a homemade touch, add freshly grilled chicken breast or try out my Italian grilled chicken.

As described, I added some Spicy Mayo and honey mustard to my sandwich, plus more of each for dipping. I also dipped my sandwich in my all-time favourite hot sauce, Dawson’s. Yes, I dipped my sandwich in sauce! I do that with burgers too, actually!

How to Store Baked Deli Chicken Sandwich
These Baked Deli Chicken Sandwiches will can be stored in the fridge for 3 to 4 days. While you can keep them in an airtight container, my recommendation would be to tightly wrap them in plastic wrap to best preserve them. To have these sandwiches the next day, they best experience is it remove the chill from the sandwich and warm the bread until lightly toasted. Unwrap the sandwiches from the plastic wrap and place on a hot non-stick pan with a touch of butter or oil. Gently heat until the bread is warmed through and optionally, to get an amazing crust, press lightly with a burger press as the sandwich warms up.

Baked Cheesy Deli Chicken Sandwich

- 75-100 g deli oven roasted chicken
- 1 demi baguette or ciabatta (8-12 inches long)
- 3-4 slices of smoked gouda, cut into thirds
- 3 slices of maple bacon, crispy
- 1/4 Cup lettuce, shredded
- 1 Tbsp tomato, sliced thin
- 7-8 slices red onion
- 2-3 dill pickles, sliced thin
- 5 Tbsp Spicy Mayonnaise (see below)
- 1 Tbsp tsp honey mustard (see below)
- salt and pepper to taste
- 200 g mayonnaise
- 2 Tbsp sriracha sauce
- 1/2 tsp lemon juice
- 2 garlic cloves, minced
- 1/8 tsp salt
- 1/8 tsp pepper

- 1/3 Cup honey
