Banana-Raspberry Nutella Galette

When you think of Valentine’s Day, you may think of chocolate! This Banana-Raspberry Nutella Galette is made with only 6 ingredients! It’s the perfect dessert to make for the special day that’s quick and easy while looking fancy and tasting amazing!

We’re already one month into 2024, can you believe it! When the calendar marks February 1st (this recipe will be out on the 2nd!), I think we’re all looking forward to Valentine’s Day! Fun fact: this year will be my first Valentine’s Day being married!

My wife has quite the sweet tooth, so I’m always happy to prepare a new dessert recipe for her, especially for the day of love!

I personally love to work with puff pastry. I find it really takes out the hassle of making your own pie crust, plus I love the flakiness of it, making it an excellent choice for a galette. What is a Galette?

A galette is a French dessert, which is a flat, open-faced pie. Technically speaking, it is much easier to make a galette than a regular pie. Like a traditional pie, you will have a filling and apply it in the centre. However, with a galette, you can be more free-form with the filling as you don’t have to worry about it oozing out of the pie! You will make folds to form a crust, but precision is not really necessary in the formation of a galette, unlike a regular pie. Additionally, with a galette, you want your crust to be flaky pastry. You could make your own flaky pastry crust, but to save time, you could use frozen puff pastry, as I will be doing here! If you do happen to have the perfect pie crust that will be flaky on hand, then feel free to use that! Do I have to Use Fresh Raspberries for Nutella Galette?

While you technically don’t HAVE to use fresh raspberries, I think they have more flavour than frozen, plus they’ll hold their shape better when baking in the oven. I also find that frozen raspberries tend to hold lots of water and due to the frost built in them which can cause the pastry to get soggy.

What Temperature IS The Oven for Valentine’s Day Galette?

Our Valentine’s Day Galette will be baking in the oven at 375 F.

HOW DO YOU KNOW WHEN The Galette has finished baking?

Since the filling is already cooked, you are looking at the colour of the pastry to indicate when to remove the pie from the oven. Look for a golden brown colour on the puff pastry - this will also indicate that the pie pastry has become crisp.

Do I need to let the Galette cool Down before serving?

It’s advised to do so for the best flavour and texture for the galette. As the puff pastry cools, the fats layer between the dough cools down as will which results in a flakier and firmer texture. The steam also gets the chance to escape which creates that classic airiness within the pastry which I deeply enjoy. Also, the cooling process helps to further develop the flavour and flakiness of the pastry.

How to Prevent the galette from getting soggy?

You can allow the pastry to cool over a wire rack. While making, a lot of steam builds up within the pastry that needs to escape which is why condensation can make the pastry soggy - especially the bottom. The wire rack will help create airflow underneath the pastry and once cooled, sogginess should not be a concern.

What Do yOu Serve Banana-Nutella Galette With?

I served mine on its own because the toppings are already so tasty! However, if you want to make this dessert even more special, feel free to top with whipped cream - bonus points for making it yourself, perhaps even in a whipped cream dispenser! Otherwise, you really can’t go wrong topping with some vanilla bean ice cream!

Tools Needed to Make banana-Raspberry Nutella Galette

Ingredients for Nutella Galette

  • Puff pastry: No need for homemade puff pastry, it’s just too much work! Frozen puff pastry that was thawed at least 6 hours beforehand will be perfectly fine!

  • Nutella: You can use store-bought Nutella, either the brand name or your favourite off-brand. Of course, for bonus points, you can make your own Coconut Nutella! My recipe is vegan!

  • Brown sugar: This is used to make the crust sweet and crispy.

  • Egg: An egg mixed with water to apply on the crust to make it golden brown.

  • Raspberries: Plump and fresh raspberries.

  • Bananas: You don’t want them too ripe or else they won’t hold their shape. Opt for yellow bananas with a couple of brown spots so that they are sweet but firm.

How To Make Valentine’s Day Nutella Galette

Make sure to defrost the puff pastry before working with it and once ready, preheat the oven at 375 F.

Roll out the puff pastry over a sheet of parchment paper and then cut the pastry into a circle, roughly 8 1/2 to 9 inches in diameter.

Add 3-4 Tbsp of hazelnut spread at the middle and using the back of a spoon, spread it around, leaving a 1 to 1 1/2 inch rim at the edges of the circle.

Thinly slice bananas and arrange them over the hazelnut spread.

Scatter a couple raspberries over the top.

Start pleating the edges by folding a small section of the edge at a time. The pleats should slightly cover the banana topping.

Lightly whisk the egg with a 1/4 to 1/2 tsp of water and then use a pastry brush to apply the egg wash over the rim of the galette.

Lightly sprinkle the rim with brown sugar and place the pie, along with the parchment paper on a baking sheet.

Bake for 20-25 minutes or until the galette is puffy, and golden brown crispy on the edges.

Drizzle the galette with Nutella from a squeeze bottle or otherwise you can add small dollops around the pastry if you want. Allow the galette to cool slightly before slicing with a serrated knife or a pizza wheel.

Tips for The Perfect Valentine’s Day Galette

  • Make sure to have parchment paper handy and work fast. Puff pastry can easily become sticky and hard to work with since the warmth from easily transfers into the pastry.

  • Allowing the galette to cool down slightly before enjoying will ensure the puff pastry tastes lighter and flakier. This is a result of the fats cooling down and firming up and the steam escaping naturally which leaves the pastry airy inside.

  • You can go a step further and create patterns within the edges or rim of the galette before baking by using decorative cutouts or arranging fruits.

  • To make it even more special, find out the favourite dessert flavours for your partner and create a way of incorporating that in your own special galette.

Can I Make Nutella Galette Ahead of Time?

You can definitely make this Banana-Raspberry Nutella Galette in advance, as it reheats well if following proper instructions, and it will taste just as good as when it was fridge!

To reheat, you would want to heat it very lightly in the microwave - no more than 10 seconds per slice! If you want to reheat the entire galette, then reheat it at 200 F until warmed through. The microwave will indeed be the better choice for when you’ve really got the urge to dig in to your special Valentine’s treat right away!

Storage Instructions

You can place individual slices of the galette in an airtight container, or if you have containers that are large enough, gently place the entire galette in a container. Alternatively, you can place the galette or slices on a plate and cover with plastic wrap, storing them in the fridge.

In fact, if you really want to, you could leave it at room temperature since the filling is made with just fruits and Nutella. On the other hand, if it’s a hot day or your kitchen is just quite hot, then I would recommend you store the galette in the fridge. Due to the puff pastry and fruits, I would not keep your galette in the fridge for longer than 2 to 3 days.

  • 3-4 Tbsp Nutella, plus more for drizzle
