What is dalgona coffee?

Dalgona coffee is also known as “whipped coffee.” It is a South Korean style of coffee where there is a frothy coffee layer on top that contains instant coffee, sugar and water. On the bottom, there is a milky base. Pour the frothy coffee over the milk, stir, and enjoy! The key to Dalgona coffee is the ratio to make the frothy coffee layer : traditionally, it is equal parts coffee, sugar, and boiling water!

Dalgona refers to the Korean honeycomb toffee dessert, made with melted sugar and baking soda. This treat became popular in the early 1950s, as it was affordable for parents to make this for their kids. The baking soda helps to achieve a foamy texture that’s similar to cold foam and whipped cream. The drink first became popular when a famous Korean actor Jung Il-Woo ordered a whipped coffee on a TV show in Macau, China, saying that it tasted like the Korean treat “dalgona.” Not too long after the COVID-19 pandemic hit, the drink blew up on social media, TikTok in particular, and everyone with newfound spare time took to the challenge of replicating the drink! However, I’ve read that there are similar whipped coffee recipes originating in India and Greece.

What Does Whipped Dalgona coffee taste like?

Dalgona Coffee is just like any other creamy latte when you stir the topping with the milk base! The Dalgona frothy topping tastes kind of like some soft serve coffee-flavoured ice cream. Actually, it really reminds me of the Haagen-Daaz coffee ice cream! It’s also got a texture similar to whipped cream, but it’s not as sweet. It’ll be slightly bitter because of the coffee, but if you use regular sugar or brown sugar, it’s not overly strong.

What is Eggnog?

Eggnog is a drink that is made with emulsified milk and eggs, traditionally served over the holidays for gatherings or just cozy snowy mornings. You can drink it plain or use it in treats and baked goods. Check out my Eggnog Pancakes for more eggnog inspiration!

You can make your own eggnog with whole eggs and egg yolk, sugar, milk, heavy cream, vanilla and a touch of nutmeg. There is a big debate about whether eggnog contains alcohol or not. From my research, it seems it doesn’t HAVE to have alcohol, but when you buy it at the store, they throw a little bit in there. You may or may not get the boozy aftertaste. From one grocery store, the alcohol taste was quite prominent. On the other hand, from another store it was more mild, and I preferred that taste.

Why You’ll Love Eggnog Dalgona Coffee!

  • Simple to make: Most of the work involves making the Dalgona whipped topping. Then you just pour in your liquids and top with this!

  • Fast: The whole process should only take about 10 minutes!

  • Few ingredients: You won’t need much to make this Eggnog Dalgona Coffee, and you may have most - if not all - the ingredients already on hand!

  • Amazing for the holidays: Eggnog is adored during the holidays, so if you’ve got lots of extra laying around, try out this awesome Iced Eggnog Latte Dalgona-style! This is sure to be a crowd-pleaser for a holiday party or you can whip it up to treat yourself on any occasion!

Do You have to use Instant Coffee?

Yes you do, but I’ll show you that you actually don’t need to use granulated instant coffee! The instant coffee helps create the airiness of your whipped topping in comparison to ground coffee. Ground coffee won’t results in the smooth texture we’re looking for.

What Instant Coffee are you using?

I’m using Javy coffee concentrate in the original flavour. This worked just as well as traditional instant coffee! You can of course use regular instant coffee if you don’t have Javy, but I like the stronger flavour Javy provides. Nescafe is the instant coffee I’d recommend, and I’ve heard that it was a Nescafe employee who promoted the whipped coffee, realizing that Nescafe whips up well, and this happened in Greece. They call it a “frappe.”

Does Dalgona Coffee need sugar?

Yes, sugar works with the water and the instant coffee to create the airy texture. Plus, you probably would like to have the sugar since your whipped topping would be very bitter on its own! However, if you don’t want to use regular table sugar, you can use any granulated sweetener including artificial ones if you want to save on calories. While I can’t guarantee identical results, they should be similar.

Can I make the whipped topping by hand?

Go for it! The only difference is it will take a bit longer and will require more effort. A good trick to quickly whip up the coffee cream by hand and start whisking, while creating a figure 8 shape. This is said to be the most efficient whip anything, and some elbow grease.

Why Did My Dalgona Coffee Fail?

If the whipped coffee didn’t float on the milk, you likely didn’t whip the milk enough. If whipped well, the lower density should allow it to float.

Do I have Eggnog Dalgona coffee with hot or cold milk and Eggnog?

You can enjoy this Dalgona Coffee however you’d like! I’m using cold eggnog and milk for this recipe since I like my Dalgona cold. If you wanted to serve this hot, you’d need to combine the eggnog and milk together in a pan and bring this mixture to a simmer over the stove. If you want a faster often, combine the milk and eggnog in a microwave-safe cup and heat it up there, then add your whipped Dalgona topping! If you’re worried about the eggnog curdling in the coffee, this shouldn’t happen. I’ve made plenty of eggnog lattes and that never happened at all!

tips for a satisfying eggnog dalgona coffee

  • You can make whipped cream easily using a stand.mixer, hand mixer, a froth or manually with a whisk. There’s also of course the store-bought option so you are spoilt for choices.

  • Ensure the colour of the whipped coffee turns a light pale brown colour for the best texture in the final dish. The lesser density, allows the coffee to float over the milk.

  • The whipped coffee stays good in the fridge for 1-2 days if you happened to make extra.

  • Be generous with the ice and be sure to stir it well before enjoying.

Equipment for Iced Eggnog Latte

  • KitchenAid Stand Mixer: You can also use a hand mixer if you don’t have a stand mixer, but using a stand mixer is much easier!

  • Ice cube trays: If you don’t have a freezer that makes ice, then make sure to have some ice cubes handy!

  • Measuring cup: To measure out your water to make the forthy coffee layer.

  • Saucepan: To boil your water to make the Dalgona whipped topping.

  • Serving glass: The glasses linked are my favourite! They’re excellent for hot and cold drinks because they retain the temperature inside but the outside of the glass won’t cause you to burn your hands or make you feel very cold!

For the dalgona whipped topping

  • Water: You want boiling hot water so it becomes foamy.

  • Brown sugar: I switched things up from the traditional Dalgona and used brown sugar here! I found this goes better with the eggnog-ness we’re going for. You can use any sweetener you want if you’d like.

  • Instant Coffee: Javy liquid coffee concentrate or a simple instant coffee. I’ve tried using a flavoured instant coffee in the past when making Dalgona and it didn’t work because the added sugar in the instant coffee threw off the ratio. If you do want a flavoured coffee, then check out one of Javy’s many flavours they have! This won’t add any extra sugar to your Dalgona coffee layer.

For the Eggnog Dalgona Coffee

  • Milk: Use your favourite kind of milk. I’m using 1% because that’s what I had. 2% or whole milk will make this even creamier and richer!

  • Eggnog: If you want to make your own eggnog, then feel free to do so! I’m using my favourite carton eggnog.

  • Ice cubes: To make our drink nice and chilled!

  • Apple Pie Spice: Made with cinnamon, nutmeg, ground ginger and ground coriander. You can make your own in a flash by checking out my recipe here!

How to make An Eggnog Dalgona Coffee

  1. Mix the ingredients for the apple pie spice and store in a cool dry place.

  2. Heat 1/4 to 1/2 Cup of water to a boil, remember we only need 2 Tbsp per serving. In the meanwhile, in the bowl of your stand mixer and add the instant coffee. Once the water is hot, add the water and the brown sugar.

  3. Start mixing on high setting until the coffee mixture turns a pale brownish colour. In the meanwhile, in the serving glass, add ice cubes to fill the glass. Then add milk and eggnog. Make sure to only fill up 3/4 of the way of your glass.

  4. Once the coffee has been whipped, spoon on the whipped coffee and sprinkle with the apple pie spice. Enjoy!

What If I have extra foam?

I had extra foam and it’s no problem at all to have extra! Simply store any leftovers in an airtight container and keep it in the fridge. I left it for one day and didn’t notice it split or flatten out. I predict it should stay good for about 2-3 days.

Can I use Dalgona Coffee on other things?

For sure! The fluffiness of the Dalgona whipped topping makes it very versatile! If you love coffee flavoured desserts, then definitely experiment with this! You can top it over brownies, pancakes , yogurt, smoothies, such as Healthy Strawberry Cheesecake Protein Shake or Healthy Mango and Vanilla Protein Ice Cream; ice cream or even oatmeal - overnight oats or stovetop oats!

Variations

Here are some ways to switch up your Eggnog Dalgona Coffee!

  • Chocolate: You can either line the glass with Chocolate Mocha Syrup or add the chocolate syrup over your whipped Dalgona foam. I’m a huge chocolate lover so I’d love to try this out! You can even add some cocoa powder into the Dalgona whipped topping mixture!

  • Caramel: Another great syrup option is to use Simple Caramel Syrup! It’ll be an awesome combo with the eggnog! If you’re looking for an adult Eggnog Dalgona Latte, then feel free to try my Coffee Whiskey Caramel Sauce!

  • Spike the Eggnog Dalgona Coffee: Speaking of adult beverages, you can also make this boozy by adding rum or brandy into the glass or the Dalgona whipped topping.

  • Pumpkin spice: I’ve used apple pie spice for garnish here, but Pumpkin Pie Spice would be an excellent substitute! In fact, even try adding in some Pumpkin Spice Sauce as a sweetener!

  • Switch up the sweetener! You can substitute brown sugar with honey, cane sugar, or maple syrup. Also, nothing wrong with good old table sugar. For a hint of vanilla, I recommend my adding my Quick Vanilla Syrup for Coffee in the whipped coffee layer. To lighten the calories, try Stevia or Splenda.

  • Decaf: Feel free to use a decaf instant coffee if you’re making this in the evening or you are sensitive to caffeine in general. Javy also makes a decaf version of their liquid concentrate!
