When Should I serve Mixed Mushrooms oN toast?

Honestly, you could have this Mushrooms on Toast recipe any time of the day!

  • Breakfast: It may take some time to prep the ingredients, but this breakfast will get your day off to an amazing start being balanced and packed with deliciousness!

  • Lunch: Mixed Mushrooms on Toast can be a light lunch for your busiest days.

  • Dinner: Breakfast for dinner anyone? If you’re not in the mood for something heavy and involved in terms of time, effort, and clean-up, then be sure to make some mushrooms on toast - you won’t be disappointed!

  • Snack: Maybe have only one small toast, but why not have this as a snack! This could be excellent after a hard workout! You could even make this over small baguette pieces to serve as an appetizer.

Do I need to Wash the Mushrooms?

If you are using wild mushrooms then you must wash the mushrooms before using. However, if you are using farmed or commercial mushrooms, then it is generally recommended to wash as well. While these mushrooms are pre-washed and cleaned, there are possibilities of surface contaminants and dirt from farming or handling that is good to be washed and scrubbed away.

Just make sure that you dry the mushrooms promptly after washing and not let them soak any water since mushrooms are porous.

Tips for The MOst Amazing Sautéed Mushrooms ON toast

  • Make sure to rinse and clean the mushrooms and dry them well promptly.

  • Cutting the mushrooms into even sized cubes will help them cook evenly and will help give a consistent texture in the final dish.

  • You can experiment with other mushroom types like Chanterelles or Maitake and adjust the mushroom ratios to best fit the amount of mushroom flavours and variety to suit your palette and preferences.

  • Broil the toast until cheese just melts. If you don’t have a broiler, I would suggest to grate the cheese very fine and let the residual heat from the mushrooms melt the cheese.

Tools Needed to Make Mixed Mushrooms on toast

  • Bread knife: If you’re not using sliced bread, then you’ll need a good bread knife to cut your bread loaf into nice slices.

  • Measuring spoons: Helpful to measure your salt.

  • Measuring cup: To measure the white wine and cheese.

  • Sharp chef’s knife: To cut the shallots and the mushrooms.

  • Garlic press: To mince your garlic.

  • Cutting board: A good workstation for all of your cutting and chopping is key!

  • Cheese grater: In order to grate your cheeses for topping over the toast.

  • Colander: To rinse and drain your mushrooms.

  • Non-stick pan: To sauté the mushrooms and aromatics.

  • Wooden spoon: A gentle way of stirring all the ingredients in the pan without making scratches!

  • Ramekins: Handy to measure out and hold your prepped ingredients, making them ready for cooking.

  • Salt crock: I like a salt crock to conveniently store and use my salt so that it’s always on hand next to me! It also came with a nice little wooden spoon!

  • Pepper mill: Freshly grated pepper is my choice, so a good pepper mill will be key here.

  • Baking sheet: To place the toasts on for broiling. I place aluminum foil over the baking sheet, and then place a wire rack on top to prevent any sticking of the cheese and bread and for an easy clean-up for the baking sheet!

Ingredients for Hearty Mushrooms on Toast

You can also use the recipe card to scale the recipe based on how many toasts you want to make so that you have the right amount of cheese and mushrooms to really load up your toasts! By default, this recipe will use enough mushrooms to make 4 large slices of toast.

  • Olive oil: Used for sautéing the mushrooms and aromatics.

  • Mushrooms: I used 50% cremini, 10% portobello, 25% shiitake, 15% oyster mushrooms.

  • Toast: It wouldn’t be mushrooms on toast without some toast! I’ve used sourdough, and I’ll be toasting it under the broiler, then adding the cheese so that it’s warm and nicely golden brown.

  • Shallots: Shallots are sautéed with the mushrooms add a slight onion flavour and subtle sweetness to the mushrooms.

  • Garlic: Freshly minced garlic cloves are key to bring out all the wonderful flavours we’ll have here.

  • White wine: To deglaze your pan and to add an even more incredible sweetness to the mushrooms!

  • Cheese: I added some leftover Mexican fiesta cheese blend and some steak spice Havarti to my toast to add some gooey cheesy goodness to the dish!

  • Salt and pepper: Season to taste!

  • Chives: Topped at the end for garnish and a bright pop of colour.

Ingredient substitutions

  • Mushrooms: A blend of any kind of mushrooms will work here, so feel free to experiment! You can use wild mushrooms if you would like, but be sure to wash them well if you are. I am using a blend of 50% cremini mushrooms, 25% shiitake mushrooms, 15% oyster mushrooms and 10% portobello mushrooms for this dish.

  • Bread: Other delicious breads that will hold your toppings well are rye bread, ciabatta, or a baguette. Look for thick and crusty bread.

  • Gluten-free: The only source of gluten in this recipe is the bread. All you need to do is choose a gluten-free bread and you’ll be all set!

  • Oil: You can use butter, vegan butter, or coconut oil if you’d like.

  • Wine: If you don’t want to cook with wine, feel free to substitute with vegetable broth. Of course you won’t have the same flavour, but it will help enhance the flavours and deglaze the pan.

  • Cheese: Other excellent cheese options for this recipe are Mont erey Jack, brick, yellow or white cheddar, or even Gruyere.

  • Shallots: If you don’t have shallots, red onions will work, but the flavour won’t be as potent! Shallots really give off their own flavour, so I would recommend you use them if possible!

  • Herbs: Other herbs that will be excellent garnish choices for this Hearty Mixed Mushrooms on Toast include parsley, thyme, sage, or basil.

Variations of Mushrooms on Toast

  • Spicy: Throw in some chilli flakes when cooking the mushrooms for heat, and/or hot sauce or chilli flakes on top when serving!

  • Seasonings: I’ve just got basic salt and pepper for seasoning the mushrooms, but if you wanted to you could switch that up! Try seasoning the mushrooms with Lebanese 7-Spice, Cajun Seasoning, or Curry Powder.

  • White sauce: You could use the principles of this recipe with the mixed mushrooms and white wine but also include the white sauce I make in my Cheesy Mushrooms on Toast recipe.

  • Vegetables: You could also cook some greens like arugula, spinach, or kale with the mushrooms for an extra nutritional boost.

  • Spread: You could spread on some cottage cheese, mascarpone, cream cheese, or ricotta cheese for a rich and smooth base for your mushrooms.

  • Toppings: To boost up the protein, feel free to top with a fried egg or even a poached egg, crispy tofu, bacon, or ham.

  • Final touches: Try a drizzle of truffle oil to really make these Mixed Mushrooms on Toast fancy! You could also garnish with some Basil Pesto. For some crunch, you could also add some chopped almonds or walnuts.

How to Make Easy Sautéed Mushrooms on Toast

Preheat the oven at 350 F in convection mode.

Wash the mushrooms as required and then pat them dried. Dice the mushrooms into 1/2 inch cubes.

Heat olive oil in a warm pan and then add the mushrooms. Stir well, cover and cook until the mushrooms start to release their water. Add a pinch of salt and mix to help speed up the process.

Once the mushrooms are reduced by around half, add the shallots, chives and garlic. Mix well, season with salt and pepper and cook for 3-5 minutes or until the rawness of the veggies is cooked off. Then, deglaze the pan with some dry white wine and mix well. Taste and adjust for seasoning.

While the mushrooms are cooking, place 1/2 inch thick slices of sourdough bread to the oven on a wire rack thats lined on a baking sheet. Toast until crispy and then top with cheese. Place the baking sheet back in the oven and turn on the broiler to melt the cheese.

Once the cheesy toasts are ready and the sautéed mushrooms are cooked, serve the dish by portioning the mushrooms over the toast and top with more chives.

Enjoy fresh.

What if I Cooked Extra Mushrooms?

That’s no problem at all! If you’ve got too many mushrooms too fit on your plate, then you can transfer the extra mushrooms into an airtight container. You can use these mushrooms on more mushrooms on toast or to use however you want, such as in rice, with pasta, or even in sandwiches and wraps!

Ingredients

  • 2 tsp olive oil
  • 3 cloves garlic, finely chopped
  • 3 shallots, finely chopped
  • 24 cremini mushrooms
  • 2 portobello mushrooms
  • 8-12 shiitake mushrooms
  • 3-4 oyster mushrooms
  • 4-6 thick slices of sourdough bread
  • 1/4 Cup Havarti cheese
  • salt and pepper, to taste
  • chives, for garnish

Instructions
