It may not seem like it, but I just love tomato soup - it’s my favourite and I really would have it quite often growing up! I’m surprised that it took me this long to make a tomato soup! What sparked my inspiration for this recipe was actually the soup that was served as the first course of my wedding dinner in 2023. That soup was the best tomato soup I have ever had - well at least until now! What was sad about that experience is that I barely got to eat it since my wife and I were whisked away from our dinner table to take photos with the photographer and get video taped by the videographer! However, despite only having a couple of bites of that soup, I remember it so fondly.

Is this Tomato Soup Recipe Healthy?

Yes, this Roasted Tomato Soup certainly is packed with health benefits! Tomatoes are an excellent source of a variety of vitamins and minerals, including Vitamin C, potassium, Vitamin K1 and folate. Tomatoes also contain a wide range of plant compounds, which are lycopene, beta carotene, naringenin, and chlorogenic acid. The redness of the tomatoes are attributed to the lycopene content, and redder tomatoes contain more lycopene. For a tomato soup, you really want to ensure that your tomato is very bright red on the outside and on the inside!

With these vitamins, minerals and plant compounds, the consumption of tomatoes can assist with heart health. The lycopene can help to reduce the LDL (bad) cholesterol levels, to fight against inflammation, and can protect the inner layer of blood cells, potentially reducing the risk of blood clotting. Can I Make Tomato Soup Vegan?

Yes, this is certainly possible! The only dairy we have in our Roasted Tomato Soup recipe is the heavy cream. An excellent substitute for heavy cream that will still give you thick and rich results is coconut milk or coconut cream.

Tools Needed to Make Roasted Tomato soup

Ingredients for Roasted Tomato Soup

  • Tomato: I use organic tomatoes on the vine because they are the sweetest and tastiest tomatoes.

  • Olive oil: One of the key ingredients used to coat the onions, garlic, and tomatoes before roasting them in the oven.

  • Spices: Chilli flakes for some heat and a bay leaf to release an incredible aroma.

  • Onions: Yellow onions here for a bit extra sweetness. You’ll want to dice these.

  • Garlic cloves: Freshly minced garlic cloves.

  • Heavy cream: Some heavy cream to add richness to our stew and really make it comforting and delightful!

  • Vegetable broth: This is the base of our tomato soup. Personally, I like to use chicken broth because it imparts its own amazing flavours. If you’re not vegetarian, you can certainly use chicken broth, if desired.

  • Better than Bouillon vegetable: If using vegetable broth, I find this paste really adds an extra layer of flavour to your base. If you can’t find it it’s not the end of the world, but I really recommend you get it because it will enhance all of your vegetable-based soups!

  • Butter: Optional if you want to add richness and an extra shine and smoothness to the appearance of the tomato soup. Add some butter after you’ve blended everything.

  • Salt and pepper: Key seasoning to be added to taste! We’ll also be adding extra freshly cracked ground pepper for garnish.

How to Make Cozy TOmato SOup

Preheat the oven to 375 F and cut the tomatoes in quarters.

Add the tomatoes, onions and garlic to a baking sheet lined with parchment paper. Drizzle olive oil on top.

Mix well and season with salt and pepper. Bake for 30-40 minutes.

Transfer the ingredients to a large pot, turn the heat to medium and add vegetable broth, bay leaf, vegetable bouillon paste, red chilli flakes, and stir everything well. Bring the ingredients up to a gentle simmer and continue to cook for 15-20 minutes.

Discard the bay leaf and then blend everything to a smooth consistency using an immersion blender or a traditional blender. Bring the soup, back up to a very gently simmer and then garnish with heavy cream, adjust seasonings with salt and pepper. if the soup is too thick, adjust the consistency by adding a splash or two of the vegetable broth.

Serve fresh and hot, topped with cream, croutons, and freshly cracked black pepper.

Tips for The Best Roasted Tomato Soup

  • If you can find fresh, juicy tomatoes that are ripe and juicy inside, they will make for a great sweet and tangy flavour in this soup.

  • Herbs can work great in this soup, especially fresh basil chopped up and added before serving. You can even use a touch of dried oregano while roasting the vegetables to make the soup even more fragrant.

  • Butter can be added after the soup is puréed to add additional creaminess and richness to the soup and add a touch of shine to it as well.

  • Instead of of cream garnish, you can add finely grated pecorino romano, grana padano or parmigiano-reggiano cheese.

Can I Make This Roasted Tomato Soup in Advance?

Of course you can! This soup is perfect for making a large batch and to have on hand for whenever you need to warm up!

Simply transfer the soup into an airtight container and place in the fridge. If the soup is still hot, store uncovered until the soup has completely cooled down. Your Roasted Tomato Soup will be good in the fridge for 3-4 days. If you can’t eat your soup within this time, no worries because it is freezer-friendly!

Before freezing your Roasted Tomato Soup, allow it to cool down to room temperature to prevent excess frost and ice from developing once the soup is frozen. I also recommend that you divide the soup into portions that you plan to consume once defrosted. Then, go ahead and label and date the container and freeze in a freezer safe container. The stew should stay good for up to 3 months. Longer than 3 months, the quality of the texture, flavour and nutrients will start to eventually degrade in addition to risk of freezer burn.

How to Reheat Roasted Tomato Soup

Of course, the easiest and fastest way to reheat your Roasted Tomato Soup is in the microwave for 1-2 minutes, ensuring to stir at least halfway through the reheat time. As you can imagine, when I’m very hungry and impatient to eat, this is my preferred method! However, you could also reheat the soup over the stovetop on low heat.

However you choose to reheat your Roasted Tomato Soup, I recommend that you keep an eye on the thickness of the soup. If needed, add more vegetable broth or water to make the gravy thinner. Your tomato soup will naturally thicken the longer it stays in the fridge, plus it will become thicker due to evaporation while reheating.
