Strawberry Shortcake Pancakes Recipe
Pancake Sunday has rolled around! Time for another recipe! I have a huge selection of pancake recipes depending on your mood! Who loves fruits and is crazy for strawberries? This delicious, light and fruity rendition of Strawberry Shortcake brings the fun and flavour in a compact package for your breakfast.
These strawberry shortcake pancakes are simple pancakes made from a batter with oat flour, and they’re layered with caramelized strawberries and whipped cream. This sounds simple but trust me, there’s so many intense flavours thanks to the caramelized strawberries, and that’s the part that truly shines in this pancake recipe!
Caramelizing the Strawberries
This recipe for strawberry shortcake pancakes is the perfect recipe for beginners. Caramelizing strawberries may sound intimidating, but trust me, you will not believe how easy and delicious they are! All you need to do is roast them in the oven! Caramelizing strawberries is something I love to do to truly enjoy the juiciness of strawberries. They become almost like jam! Caramelizing the strawberries is also ideal for someone who loves the natural sweetness of fruit. Of course if you have a giant sweet tooth, you can sprinkle on the sugar on top of the strawberries before adding them to the oven.
Layering the Strawberry Shortcake Pancakes
After you’ve finished cooking your pancakes, you’re going to layer them with some of the caramelized strawberries and whipped cream. If you want to go bananas (even though we’re eating strawberries!), you could add some extra sliced strawberries on the top pancake. To bring this Strawberry Shortcake stack together, finish off with a generous dousing of maple syrup.

Strawberry Shortcake Pancakes
Ingredients:
- 1 Cup all purpose flour or 1 3/4 Cups quick oats (160 g), blended into oat flour
- 2 tsp baking powder
- 1 1/4 Cup water or milk
- 1 large egg
- 1 Tbsp honey
- 1 tsp vanilla extract
- 2 tsp butter, for cooking
- 2 Cups strawberries (300 g), thawed if frozen
- 1-2 Tbsp sugar (optional)
- 6-8 Tbsp whipped cream (or make your own!)
- maple syrup to taste
Instructions:
- Preheat the oven to 450 F. Arrange a baking sheet with parchment paper and spread the strawberries in a single layer. If you have a sweet tooth, sprinkle 1-2 Tbsp sugar and toss to coat. Bake for 15 minutes, stirring every so often. Cook until strawberries are completely caramelized.
- In a large mixing bowl, add the flour/oat flour and baking powder. In a separate bowl, mix together the wet ingredients - water/milk, egg, honey and the vanilla extract.
- Add the wet ingredients to the dry and begin whisking using either a whisk or a stand mixer, until you get a thick but runny pancake batter.
- Heat a pan to medium heat. Add a bit of butter and scoop out about 1/4 cup of pancake batter onto the pan. Cook for about a minute or two, until the pancakes start to form bubbles on the surface
- Then, flip the pancake and cook the other side. Once the pancake is cooked, transfer the pancake into the oven and place on a baking sheet. Repeat these steps for the remaining batter.
- Once strawberries are ready, transfer to a colander and place a bowl under the colander. Let the strawberries cool and drain excess juices, about 10-15 minutes.
- When all the pancakes have cooked, start layering the pancakes in the following order. Equally layer pancake, caramelized strawberries, whipped cream. For the top one, add some whipped creamand top with rest of strawberries. Serve hot and enjoy :)
